Homemade Salsa

So Ive been making my own salsa for a while now. Its extremely easy and most of the time cheaper than buying the garbage in a jar. Plus it allows me to make it how I want, no more having to choose between hot, mild and medium.

Here we go.

-2 Jars diced tomatoes ( prefer the no salt added)
-Cilantro (depends on how much you like, I add about half a bunch)
-One onion(medium sized)
-Jalepeno (or pepper of preference, can add as many as you like though it will get hotter as it sits)
-pepper
-some salt to taste
-garlic (I do 2 nice sized cloves)
-half lime or lemon
-Chili powder (or any spice youd like, some reason chili powder seems to always make the flavor pop, along with some cumin)

I dice everything up and throw it in my vitamix and pulse it a few times to make a nice chunky mix. I add mojo to the mix as well usually but its not really necessary, I just love mojo. Let it sit overnight in the fridge and it should be ready to go, by then the acidity from the tomato should of brought out the flavor in everything. I tend to make it right before I goto sleep and that way in the morning I have some fresh tasty salsa to put on whatever Id like.
With the onions I wouldnt dice them too small since that helps the salsa be chunky.
You can pretty much throw in whatever youd like as well. I put black beans in there alot, with some feta and some corn. My roommates have used fire roasted tomatoes for a smokey flavor. Ive thrown pineapples in too. mangos and habaneros are great. Like I said, get creative, its going to taste great. Ive also thrown in vinegar too, just in case theres not enough liquid in the mix to get it all to blend.

Oh and I forgot to add, it takes maybe 10 minutes to make it all. Im telling you, theres no reason to buy the stuff in the jar.

Doesn't sound too bad. I make mine completely different, though.

Just curious - why canned tomatoes? Why not just dice up a couple of fresh and skip all the preservatives/chemicals that line metal cans?

just because its quicker. not much quicker but just having to open the can and not having a dirty cutting board and knife cuts down on my time in the kitchen
