Any professional cooks here?

Whats up guys,

I was just wondering if there are any professional/executive chefs that are on this board or anyone that has had any type of formal culinary training. I myself am considering culinary school (The Culinary Instittue of America), and I was just wondering if anyone has any advice regarding culinary schools or that type of career. I hear all the time about cooks and chefs being burned out from the long hours and hard work that it takes to run and operate a restaraunt, and sometimes that makes me rethink if its really what I want to do.

Did it for 12 years when I was young and single. It is all-consuming, as you will socailize with other restaurant people at 4am when you get off work.

Anthony Bourdain is pretty close to the mark when he talks about the life of a chef and restaurants.

You won't go wrong with the CIA. They are the Harvard of cooking schools if you can afford the tuition. My best friend went to the CIA in SanFrancisco, now lives in SanDiego working as executive chef. The one in Hyde Park NY is the best...but wherever you go.....you'll be doing yourself a big favor for your cooking career.
