anyone know of any mp3, ogg, etc. products out there that have say 40 GB capacity and can plug into the aux input of the factory head unit?

Do a search for full details, but briefly you'll want to get an adapter like Blitzsafe and then you can plug in just about anything with an audio out, e.g. Ipod, etc. Although I can't say with 100% certainty, I am almost positive there are no devices that go direct -- there just wouldn't be a market for them.
