no where in your question that it states you want it music to play out of the car..
how long have you had the car???

if your making calls through the car via bluetooth, your music will shut off and you will only be listening the call.
its a standard feature on the car. at this point, there is no way around it.
best thing you can do is to not use the bluetooth via car to talk on the phone, just put phone call on speaker on your phone so this way you can listen to your music and phone call at the same time.

I have a degree in english so mine is definitely not off, maybe its yours?
I can use my phone as a phone, however when I have the hdd/aux and press play on my phone, it plays thru the phones speakers, not the car? Is that simple enough?

Check the settings on your phone. There shuold be something to allow the music to be streamed through BT.
I know that The iPhone has the option to switch from headphones, dock connector and Bluetooth when available.

I'm sure it's in the manual and you're just not understanding. I don't even have a 4G and I could get it to work with the information provided. All the degrees in the world, and the two I would never guess are English and anything automotive.

I know, for example, if you are using Pandora on your phone, you have to go into the settings and actually select "Bluetooth Car Audio". If thats not the case, I think on the S3, sometimes when you pair the phone up, it doesn't recognize all the services that the bluetooth device has to offer. On your S2, you may need to go to Settings, Bluetooth, select the "HandsFreeLink" Bluetooth pairing, then ensure that all of the services are highlighted to be used in the paired connection.
