Should actually work a little bit better if you put a little extra time into it.
The new N7 has the ability to have an external mic input on the headphone jack, so you should be able to have your audio out and external mic input both on that jack on top of the new N7.
Which means you can get it to function as a handsfree device for making calls if you use something like talkatone or grooveip with it. You'd also have to use google voice though and do call forwarding when you got in your car, but you can set those up with a trigger using tasker. I suppose if your HFL still works that isn't really a concern though.
You'll have to use tasker or something similar to put the N7 to sleep when it's powered off if you want it to quickly wake-up when you get into your car though and Timur's USB-ROM won't work on the new N7.

Do you know of anyone who has done this to a Navi TL?
I have the first version of the N7, so mine is using USB-ROM.
I've been able to get the tablet to place and receive phone calls doing the setup mentioned above, but I haven't been able to get an external microphone to work and the microphone that is inside of the tablet is buried inside of the dash so it picks up a lot of noise. That makes it really impractical for use, I end up being able to hear the distant end just fine through the car's sound system but they can barely hear me, if at all.
Mine is non-nav and I've maintained use of the stock sound system, here's how mine is setup.

I'm about to change out the PIE X3 for the ISHD531 though, the X3 is giving me a bit of a ground loop sometimes when I use the tablet.

The difference is the connectors on the nexus one the headphone jack and mini USB are on a relocatable ribbion . on the nexus two the connectors are fixed on to the mother board via solder. You will have to dremel out the surrounding area (hvac) control buttons. I'll try yo post up pics. Also their an app call Ed keep screen which will you can set to keep your screen on when charging, so no need to root ur nexus or relocate the power button as most nexus 1 installs do.
