check out www.mp3car.com There are power supplies made for carpc with auto startup and shutoff function. There are also seperate shutoff controller that you could buy.
For my system, I am using the OPUS150 power supply. The way it is hooked up is that whenever the ignition is turned on, it will send a pulse to the on/off button of the computer. So when I start the engine, it will turn on the computer. When I turn off the ignition, the OPUS will sense the shut off and will send a pulse to the on/off button again after a preset time. I have my system set to hibernante when the on/off button is pressed.
For my carpc, the computer would hibernate 30 seconds after I turn off the key. When I restart the car, the computer will turn on and resume operation from previous state (mp3, DVD, video, navi etc).
