On the '02 I took everthng off, but I was adding SS lines, rotors, etc. Iused spray on those (several coats) and spray clear (also several coats).
On the '07 I left everything in place and used the brush kit.
Honestly, the '02's look better, but both seem to be holding up (i.e. about the same durability).

Anything is possible with proper application of money. 
The front brembos would be silly, but brembo does make smaller calipers as well that could be made to work with a custom bracket. Probably not worth the time and money unless you're doing a track car. (and even then....)
