Update: not a fan of the beer batter, to thick for my liking 
Gonna stick with just flour in the future, i prefer the light crispy skin like when MM skins people and fries them up like cracklins'

Beer batter is fine. But a simple flour coating, maybe with some onion and garlic powder, is divine for homemade fried chicken. 
Mrs Wagon has a strict, "don't eat the skin" rule because it's unhealthy. But I always "forget". Sometimes, I'll "forget" and eat all of the discarded skin.
