Question Ecu

If I understand correctly the info that I've been able to gleen off of here, the ECU "learns" the nature of your driving habits and tends to set itself accordingly(?) So, it sounds like if you regularly drive like a bluehead, and then suddenly floor it, the car might not be as responsive as it would be if flooring it was your regular habit - am I correct? Now that I've got some tires that actually hold the road I've been driving more spirited fashion - but I still rarely get up to 4000rpm. My question is if I regularly got into the 5000rpm range (is this what people call vtec?) would my car seem more ready and willing under normal accelerations? Thanks for any help...
