So i finally decided on some wheels and now i just need to know if i should go with 18x7.5 with a 45 offset or 18x8 with a 40 offset and what tires would be best for either set

Higher offset would be better if you're worried about rubbing. Just get the correct tire size for the rims.

 

18x8 40mm offset would look best. But you will most likely have to roll the fenders. Im running on 19x8.5 +40mm on 235/35 tires and I rubbed before I rolled the fenders. I still need to trim the bumper tabs though.
