What's with 1 vs. 2 vs. 3-piece wheels? What are the advantages/disadvantages of each? I've just started looking at possible new rims/tires for my car, and I wanted to know what the differences were... Just notice 2 and 3-piece wheels are much much more expensive

just what it says, the wheels are composed of just one piece, normally cast wheels and less expensive ones are this way.
2pc
Composed of the rim and the spokes, not too many, but there are some.
3pc 
Often very expensive high quality wheels.
Composed of a lip, rim, and spoke. You can usually tell a 3pc by the real rivits just inside the lip.
Main advantage of 3pc wheels is if you ever damage the lip by hitting a nasty pothole for example, you can just replace that one part instead of the whole wheel. And by having the modular peices, it is very less prone to cracking.
If you can afford 3pc wheels, go for it, they usually are very beautiful wheels.
