Can our cars be stolen?
I remember listening to the salesman tell me there is a computer chip in our keys and there is no way to start our car except with that specific key...is this true?

They can be stolen. Flatbeds... tow trucks. Wh's the guy who had the tow truck almost towing his car away at Giant?

Stolen - yes. If someone tows your car or steals/copies your keys. Or you get carjacked.
Hotwired - no. I don't think there is anyway the Electronic immobilizer system can be bypassed. The ECU will not work without the correct code. The code is read from the ignition key by a transponder, then sent to the ECU.

You can install an aftermarket bypass to work with a remote starter. The bypass will use a blank key (or store the code electronically) to send the code to the ECU.
