I am guessing that there is a lot of humidity in the air where you are. This would happen when the moist air inside the car condenses on the windshield because of the cool night air. You can run your a/c on recycle before you park the car for the night to remove some of the humidity from the interior. However this can result in a funky smell in the morning from the moisture sitting on the evaporator coil all night long.

When is the last time you cleaned it? Plastiziers from the dash help to increase the condensation point on the inside of the car. Using a quality glass cleaner like Stoners (can find at Target) helps to remove them and make defrosting a lot easier. The other thing you might want to check for is any standing water, like in the foot wells. Check under the passenger seat as well, that is where there is an outlet port for the HVAC and in some cars this was incorrectly installed/blocked and created a damp/wet area.

If you live in an area that sees snow or freezing temperatures, this is almost always attributed to dampness in your floormats and/or carpeting. What I do 2-3 times a year is put newspapers or flyers under the mats for a day or so, and then take them out. You will notice that they are absolutely soaked. This is the moisture they drew up from the carpet. Also, clean your floormats of any snow or slush on a more regular basis.

Parking in a garage with one window open about an inch is good as well, and will help prevent the windshield from fogging, but it doesn't solve the cause of the problem (the damp mats and/or carpeting).

I'd check under the whole rug (under the floor mats) and see if any of it is wet. In my experience, (I had a similar problem with a Toyota pick up years ago) that moisture that condenses on the windshield (due to a temperature difference between the inside and the outside of the car) is coming from somewhere. It appears you may have a leak somewhere inside the car.
