How do 6-speed owners slow-down and down shift?
If you simply just go to a lower gear, the RPMs go higher and
there is a jolt which probably isn't optimal.
Do people heel-to-toe? if so, please describe as best as possible how
to learn this technique? Give examples of using it too
much appreciated!

that said, practice makes perfect - do this in a parking lot before you may possibly kill yourself (or someone). downshift thru the gears, except directly into 1st gear. your tranny will thank you.
i.e.: you're on the highway, 55mph @ 4th gear and see traffic jam.
hit brakes (speed/rpm dies down), heel-toe down to 3rd gear, still slowing down, heel-toe to 2nd gear, eventually slow down to 0. then just put into neutral and go back to 1st gear.

You don't exactly need to heel-toe in order to slow down. Just rev match during downshift, then you won't get that annoying jolt. Heel-toe is more towards performance driving.
sometimes just rev-matching when downshifting is easier in traffic

You can learn this and other techniques by renting a video call Best Motoring, a driver nick named Driftking is a master at this. BTW, heel and toe is use mostly on a track, unless you are doing some super fast cornering, you really don't need it imho.
