Comparing an '05 to an '07
I just bought an '07 AT/NAV and gave my '05 AT/NAV to my daughter for her high school graduation present. Absolutely loved the '05 and always found it a tremendous pleasure to drive. I tried the TL in both '05 and recently and just enjoyed the TSX much more. The current iteration of the TSX is more refined than than the '05 in terms of its handling and ride . The current model is quieter, smoother and handles bumps better. It feels a little more solid. I really like the HFL, memory seat and the updated radio access at the top of the NAV. I cannot stand the new steering wheel and I'm still trying to get used to it. The "bumps" at 10 and 2 are annoying for me and not very comfortable. I put the USA-Spec in my '05 and I can live with the auxillary jack for a $6.00 patch cord. On the whole, Acura has done a nice job of updating and refining the car.
Lucky you. I wish I could upgrade from my '04, but I have no good reason to, except that I want to, lol (would love navi, bluetooth, etc). Not a good idea for me financially though, so I'll hold off till I need to.
I have a 06 and I had an 05 loaner for about 4 days and the improvement on the 06/07 model were worth the wait for me.

Faster acceleration, more HP
Standard Fogs
HID seamed brighter on the 06 compared to the 05

Low profile wipers
No metal trim on hood above the grille
Prefer the 06/07 A-spec compared to 04/05 A-spec kit
Another year to correct squeaks, rattles, TSB problems (so far no problems with 06)
I’m saving my 06 for my son when he gets to driving age 6 years from now.

???Oh, and to the OP this is the first time I've heard of anyone preferring the 04/05 steering wheel over the 06/07.
Call me crazy, but I actually might not have bought the car if my 06 didn't have the 10 & 2 bumps. In fact, I've been toying with the idea of swapping out to the JDM Euro-R MOMO wheel, but that'd mean I'd have to rebadge my car, and I kinda like driving an Acura

I actually prefer the entire look (rims, front and rear bumpers, side sills, hood w/ chrome grill edge) of my 05 over the 06/07. I find the 06/07s to look a little squarish, a little too edgey.
Aside from looks, I'm sure I'd like the ride quality of the newer models. I've only sat in them in showrooms and like the new gauge cluster w/ trip computer, steering wheel, silver radio knobs, and the higher quality center consol trim.
I guess If I had it my way I'd take an 05 body on an 06/07 chassis.
