what is the diff btw....
the adj. shocks are different from coilover's in that they only allow you to adjust the stiffness of the ride, not the height. coilovers allow you to adjust the height. the main reason that your car gets lower when you put new shocks on is that the shock body is shorter than that of the stock one. but if you combine the right adj. shocks with the right coilovers you will have a comfortable ride.
I have Koni Sport shocks on my 97 3.2 TL and they are adjustable both in height and damping. The height adjustment is not infinitely adjustable as the coil-overs because it has grooves cut into the shock body to set your height. I had a couple of grooves machined in the shock to give me the height I wanted. Also the coil-overs can be height adjusted easily after it is installed on the car. The Koni's are a little bit more difficult because you have to move the clips.
I think some coil-overs have adjustable damping as well.
