Temp Gauge problem

Ok guys, Please help. 98 3.0 cl. when i start the car (cold) the temp gauge reads as if ive been driving for an hour. It didnt always do this. It did start cold and slowly rose to the right temp. Then one day it went to full hot and then cold while driving. since then it reads the same everyday.

I have replaced the sending unit, and made sure the freon is topped off. The gauge goes down back to full cold when I shut the car off. The fans come on when there sup. to. I'm thinking its the gauge? any ideas?

Ok now over the last few days the gauge started to read below cold when I start it and slowly rises to correct temp. Looks like some problems fix themselves. Any ideas why that happened?
