I definitely recommend the RX7 if you know someone who works on them. It is honestly one of the most amazing cars i've been in. 50/50 weight distribution = 
My buddy did a single turbo swap w/ a straight 3" exhaust...the thing absolutely SCREAMED. Not to mention the handling
heres a pic of my buddies rex to get you salivating...
note: he did have some trouble with it but his knowledge of rotary engines made it at least moderately easier to address most of the problems himself. The engine was VERY temperamental in cold climate so hopefully you live someplace warm. Just make sure you read up on how to take care of your new baby
