Just did mine a few minutes ago. The replace device option did not find the new phone, but once I deleted the old phone and used add device it paired up in just a few seconds.

Same here, just deleted the old one and paired as a new phone.

Uh-oh. Some trouble is in fact brewing with the iPhone 7 and at least some car Bluetooth systems (which I think are generally made by third parties, not the car companies themselves).

I'm having issues on my iP6+ since the iOS 10 upgrade. I don't think this is iP7-specific. If I use one of my favorites on the phone, or dial from the phone, the Transfer button on the upper screen won't work until several seconds into the call. If I dial using the phone button on the steering wheel, or the car's phone app, all is well. It's pretty annoying.

I've had an unusual issue with a voice call and an iPhone 7 Plus on 10.0.2.
It's difficult to be sure what the problem was, though, because of a number of coincidences including a one-bar signal at the other end, and other issues. After switching to the handset, there was still an occasional issue with the call.
I'll try to zero in on things during my commute tomorrow.

iOS 10 and/or iPhone 7 are having some signal problems (something to do with the modem), especially the Verizon Wireless one....something you should keep in mind, also.

I've had a few more instances with the 7 Plus whereby the person on the other end hears me crystal clear, but I have difficulty hearing the person on my end.
Happens on AT&T network, *not* on AT&T WiFi.
Might have three or four balls of signal when this is happening.
Caller sounds garbled, barely intelligible, and switching between Bluetooth and the handset does not help.

(1) You get used to HD Voice after having calls that use HD Voice. In consequence of this, a call between your iPhone and another type of device, or a land line, will sound bad enough to be annoying. It won't matter if you're using the iPhone to your ear, or something else, it just won't sound good compared to iPhone-to-iPhone HD Voice.
(2) The way that the iPhone 7 Plus communicates with my car via Bluetooth just isn't as good as the 6S Plus was. I can't imagine why this would be. The voice seems to go through the centre front speaker, and it sounds like the way a speaker would sound if it's got a little crack in the cone...despite the fact that the same speaker works fine with Krell Audio.
I know it's not going to be possible to get a perfect call or HD Voice over a Bluetooth that was designed at least five years ago, but it's really not good. It's okay if you just want to transmit some information quickly, but it is not pleasant to hold a long conversation.
(3) I believe that the 7 Plus must have a different LTE modem from the 6S Plus. And it wasn't a change for the better.
I hear that data is a lot faster on this modem, but voice calls over some of the bands we use around my part of the world are just not as good.

Since you have the ATT&T model, it has the new Intel modems.....
I am under the suspicion that majority of the signal and bluetooth problems, are because of iOS10......

If it's the new modem...they might not be able to do anything like that without raising the power consumption. I guess they could be tricky and only raise the power if the device detects a handsfree or Bluetooth being used.

Main reason i say that, is that a lot of iPhone 6s running iOS 10 also have a weaker signal.
Furthermore the Verizon iPhone 7 loses its signal completely (No Service), for no apparent reason. It happens to me quite often.....
Apple has replaced some of them, but they do the same thing. They (Apple) are hinting that it is most likely a software problem.
I am hoping iOS 10.1 that is in beta right now, fixes all the signal and bluetooth issues.

George, you should update your iPhone 7 plus to 10.0.3 that was released today.....if you haven't already done so.

Don't mean to hijack this thread - but for whatever reason, my car will not show either the contact name or phone number which is texting me - it just says I have a new message and would I like the car to read it. I have an iPhone 6+ with current OS.
My wife has a Samsung phone which displays the phone number on the car's display screen when the car says she has a new text.
Is this a setting somewhere or a limitation of the iPhone? It's kind of annoying because I have to try and decipher who is texting me without picking up my phone while driving to look.
Also, my wife can select a preset response from the car's menu and hit send. When I try that with my phone, it won't let me - I forgot exactly what it says but basically says an error occurred and the message was not sent.
