What leather/vinyl conditioners to use?
I know this has been beat to death, but: What do you guys recommend THAT WON'T MAKE THE LEATHER (OR VINYL DASH) GO ALL SHINY?
The problem I'm having is that everything I've tried seems to take away the matte finish -- Do I need to use something different on the vinyl?
Any help would be mucho appreciated. Thanks.

It would help to know what products you have used to date. One of the more popular protectorants is Aerospace 303 and Vinylex (made by Lexol). For leather, lot of folks like Lexol and Zaino. This thread lists what products folks use to maintain and upkeep their cars.
