OK, It's been 7 months since I Zaino'ed
After a long cold winter in TN should I start all over again with the Dawn, Z1 then Z2? It's been about 6 month since the last Z2 coat.

No! You never have to start over. If the car is real dirty or picked up contaminants....use a Z7 wash as lube and clay it. If not, just Z7 wash it so its real clean, Z1 and Z2...and keep layering as usual. You NEVER have to strip zaino and start over....no need. Hope this helps.
