is there any way i can do the following with outlook:

make it so that if an email is sent to one of my email addresses with the title "Subscribe, make it automatically send a reply saying "you have been subscribed...blah blah"

i don't want it to autorespond to all emails to that address, and certainly not to all emails to ALL my addresses.

So long as you are in 2000 or newer, yes, you can do that.

Go to the toolbar at the top and choose "Tools" --> "Rules Wizard"

Select "Check Message as they arrive" and click Next
Place a check in "with specific words in subject" (click on the word 'specific' and specify the word)
Click Next
There is an option to "reply usnig a specific template"

Specify that and you should be set, finish out the wizard and you should be set.

Open a new mail message and fill it out with the information that you plan on responding with.

Don't put anything in the address line.

After you have filled it out, click on File and choose "Save As..."
There is an option in the "Save As Type" for Template (*.oft)
Choose the destination and remember where you put the template
Now, when going through the Rules Wizard, once you get to the part where it asks you for the template, you can click on that link and find the template that you created in your file system.

That should do it.
