Can any of you recommend a software solution that can probe the network to retreive and map out the various routes that are being passed by your routing protocols(OSPF/BGP)??

Most hardware vendors provide management software for their managed devices. Sometimes you have to pay for the software, but they may also provide a free lite version (I know 3com does).

I dunno all that...but if i wanted to see ip or other traffic at my last job we use to use

#1 is this for a MS env, Sun env or both?
# 2 is this for a Wan or a personal domain?

if it's for a personal domain, your hosting company may provide you with this
There are various sniffer software you can use, you can also do research on a custom sniffer that you can manually configure and it's free. I have used it before in the past, just don't remember the name. If I hear anything, I will let you know or post.

Is the environment using real routers or are they software routers (i.e. servers acting as routers)? If they're real routers then I would think most reputable hardware vendors would provide this information via RMON. If you're specifically dealing with Cisco hardware then I believe they have a program called "route manager" that you can get for free as long as you have an account on Cisco's site.
