True story and probably not for this thread, but my buddy and his (now) wife went out on their first date, and his chick had to shit. She asked him to pull over at an overpass, she leaned her ass over the railing and shit, took both her socks off to wipe and got back in the car. So last night I spatchCOCKED my chickens, rinsed them and put them in the brine. I think by opening up the cavities it will allow the brine to penetrate deeper into the meat

Should definitely help the brine having done the spatchocking first so it can penetrate the underside too. The other thing I want to try next time I do one is putting the rub under the skin instead of on top of the skin. Just seems really difficult to do.

Cooked them last night, love the new hinge. Had to get used to it, but it's so nice to pop the lid up and not have to hold it while taking pictures or moving the meat around. The new thermometer is awesome, although I may upgrade to the bigger one so I can see it from inside easier. Was aiming for 250 and nailed it

And the finished product, this thing was so damn juicy the second I broke the dark meat off juice literally started pouring out of the meat. Definitely recommend cutting the backbones out the night before if you're brining. It really helps get the brine into the meat better

So Friday I made smoked chicken enchiladas and they were absolutely incredible! I stuffed them with black beans, onion, pepper, colby jack and used Trader Joe's enchilada sauce. The smokey chicken complimented the enchilada sauce perfectly. SO freaking good!

Thats what I would have thought but not how I read it. With the Green Egg some guys use it as a second oven so I guess I could do the entire thing in there. Figure maybe the smokey mountain could be used the same way.

It can be, but the chicken was already smoked so no point. I did see a recipe where the guy smoked the whole tray of enchiladas, but no point in heating up the smoker for that when the meat is already smoked

So since I've been dieting and eating healthier I had to come up with creative ways to eat my smoked chicken this week, we made smoked chicken salads with avocado and my homemade pickled banana peppers, really good!



I also made a couple cauliflower (yeah I know) crust pizzas with the smoked chicken, and they both came out awesome. I had never made either sauce so I decided to make a garlic butter and a homemade margherita sauce with fresh garlic, tomatoes and homegrown purple basil from my garden. Both came out awesome and we couldn't decide which one we like better

Pizza stone is on my list of things to get for my egg so I can use it like a pizza oven. I want to make some cauliflower crust pizzas too. Mainly so I can eat pizza more often.

Making a butt tonight through tomorrow lunch time to take home and reheat at our tailgate this weekend.

If you havent already then you should, its easy, just gotta be gentle with them so you dont split the skin

I absolutely love smoked deviled eggs, both cherry wood and apple wood have been winners, we both think we like the apple wood better overall. The avocado instead of mayo didn't work out very well, and turned black after a day. They tasted good, but after a day they didn't look edible. Much more of a fan of using olive oil mayo in my deviled eggs

Right now my target is to lose 50 lbs. I'm down over 20 and closing in on 25 right now. My overall goal is to lose 100 but I feel like 50 is a more realistic and achievable goal and then I can reevaluate where I'm at.

You can do it man. Have you tried any of the whole 30 or paleo fads yet? I havent gone full blown but incorporate the ideas as best I can in all my meals. Im down 30lb for the year just adjusting my diet. Cutting red meats has been a huge help. Good luck to you

I had tried doing some form of paleo a few years back, the nutrition plan I'm on now is more calorie/carb counting than anything else. I'm down 23 lbs in around 6 weeks and it's going great, just have to stick with it. Was debating last night what I want to smoke next

Some friends from Pittsburgh coming this weekend so making brisket for dinner Friday and pulled pork for Saturday. These two cooks will also be my first two trying out Rockwood lump charcoal which lots of people claim to love. We will see if I can notice a difference.
