quick easy meals

Ok. I am a very busy person so I dont have time often to cook, but eating out is NOT fairing well for me.
I am also broke as a joke.

I plan on taking my lunch to work everyday and making dinner for myself to eat healthier.

Now my question to you all is, what meals do you guys make that is fairly cheap to make, nutritious and stores well for multiple servings?
(i dont care for fish so please skip any fish recipes )

Grilled chicken + rice + green beans : total prep/cook time = 10-15 minutes. Leftovers good for a few days.

Other less easy to make but freezable/near invincible meals would be turkey chile or maybe a vegetable lasagna.

Not anything in particular (used to have a girl at school who cooked it for me )

Im finding my crock pot will come of great use to have large amounts of food made for me when i get home from work, and store the rest for lunches and dinners for a couple days.

That recipe actually sounds more like a turkey meat sauce than a chili. Has alot of oregano/basil for chili.

I make turkey or chicken chili with chunks of sauted meat. I don't buy ground meats because I don't know what's in them/they go bad faster than whole cuts/the quality is normally not there, as in, higher fat content than labeled, etc.

Black beans, IMHO, have better flavor than light red kidneys. You may want to try them & some red kidney mixed for color. Just make your favorite chili recipe and substitute the poultry for the beef. If you want to do a crock pot dish full, just get a packet of chili seasoning from the store and add some zing half way thru. Some extra peppers(canned Jalaps)/dry onion flakes/few pinches of sugar if you like it sweet/heavy pinch of chili powder & garlic powder(or a few cloves of fresh).

You can't fuck chili up too bad, it's great for a 2 or 3 day meal/leftovers, etc, it CAN BE healthy if you use lean meat, and the shit tastes great after a couple hours in the crock pot.

Grill(indoors or out) some chicken breast and some chicken thigh meat. Place cooked chicken in a tortilla(corn or flour~8") with a sprinkle of cheese, refried beans, a few chives and a TBSPN of drained salsa. Roll about 8 or 10 and place in a pan. Brush on a jar of taco sauce, cover with another sprinkle of cheese. Broil on low until the cheese browns. Shit lasts for a few days easy, can be low fat if you used sliced cheese, overall it's fairly healthy.

Any type of cooked pasta that is edible with a fork(ziti/rotini/small shells) in a pot with some jarred pasta sauce, a small container of low fat ricotta and sliced mozz cheese. Mix sauce, ricotta, pasta...season with salt/pepper/parmesan cheese...cover with sliced cheese and broil. Lasts for a week in a cold fridge. If you want, add chopped grilled chicken, italian sausage or chopped meatballs.

Any poultry, cooked & chopped, covered in cooked chopped cauliflower, broccoli and a can of Campbells cheddar soup mix. Mix in a bowl, cover with a few slices of cheese and broil. You can add zucchini and green beans to this also.
You can even cook the cauliflower with onions and garlic, puree it in a food processor and use that as a sub for mashed potatoes to cover meat=Shepherd Pie.

Egg whites omelettes... You can even eat them cold... Tons of protein, not cholesterol and you can add veggies...

Tuna cans are great 2... just grab a pita bread, some low fat mayo.... et voila... instand 30 grams of protein with some carbs and fat...

You may add some low fat mozzarella to it

I make brown rice on Sunday night and portion it out in tupperware for the week. Then, I get frozen vegetarian patties put that on top of the rice. It sounds pretty boring but it's good for you and cheap. Nothing wrong with staying healthy and saving money at the same time!

1 Whole Chicken (like the pre-cooked rotisserie ones in the grocery store)
1 Medium Yellow Onion, chopped
2 Cans Diced Tomatoes
1 Can Pinto Beans
1 Can Black Beans
2 Cans Corn
1 Can Ro-Tel Tomatoes (Mild or Regular)
1 Package McCormick's® Taco Seasoning
1 Cup Grated Cheddar Cheese
1 Medium Avocado, peeled and sliced
1 packet of Equal Sweetner
1 Bag Tortilla Chips


Shred the chicken, throw it all in a pot. Warm it up, and there you have it.

Shiznit, brown rice and [enter protein here]. I mix chicken, turkey, tuna...whatever with brown rice and add Frank's Red Hor or salsa for an instant meal. Brown rice holds well too. Mix in some veggies for an even more complete meal.

i grill chicken in my forman...boil rice and mixed veges...combine the 3 for dinner everynight...trying to keep my fat levels down!

or I make a huge pot of chicken curry + potato and eat it until i start smelling and talking like a

Make a big batch of meat tomato sauce and put it over different pasta. Egg whites are also fast breakfast / lunch / snack items. I used to grill a lot of chicken breasts (salt, pepper, olive oil) and then cut them up and throw them over salad.

here's a spaghetti sauce recipe that is really good.. got it from my mom. and it makes enough to save for a few extra meals.

14 oz. can of tomato sauce
14 oz. can of peeled whole tomatoes (or quartered, whatever you can find)
1/3 lb. lean ground beef
small onion
green pepper
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. salt
1/2 tsp. sugar (yes sugar!)

brown ground beef, the add everything in a pot and let it simmer for about an hour.

everyone loves it, and if you're a garlic freak, you can add some too. but this is the best sauce you'll ever have that doesn't have garlic.

you can also tweak it a little and make chili. just add red beans and the spice.
