New Knives

I love these.......so far


They are Kershaw Shun's. 7 inch Santoku and paring

Shun's are great knifes. When I made the big purchase a few months ago I had it narrowed down those and Globals. I went with the Globals because they were the most comfortable in my hand.

I have several Henkels as well. They are good knives. IMO - they are a step below these knives though.

I just picked up a set of Henkel's. I really like them, but I looked at a couple Shuns and they were better than the Henkel's IMO.

There's another knife thread floating around here, a lot of information there.

I like the Shun's if they had them locally at any sort of discount I would probably have them instead. But I ended up going with the Calphalon Katana series.

In any case, great knives, congrats!

I bit the bullet and picked up a whole bunch of Wusthof Classics this weekend as well. Definitely night and day with the Sabatiers I had owned previously.

Those look awesome, enjoy them!

I don't have a lot of experience using other knives, but the Santoku's from my set are the knive's I use the most often. Like all the other Calphalon Katana series knives they look modern.

from my experience, this is the bestknife I have ever owned. For what it is worth, I attended Culinary school and have used a wide variety of knives.

shun's are are very nice but the metal they use is much harder to sharpen. also they are heavier than most knives out there.

global's are lighter which is better for everyday use, but you'll need more elbow grease to cut through larger item. though the handle design is nice it is more slippery tham other knives.

german vs japanese - i prefer japanese knives because they are better balance and the edges runs the whole length of the blade as oppose to the blunt end of most german knives. (that blunt end will bruise anything while you mincing)

personal choices for me are MAC knives and Misono.

I've had my Henkel knives for about a year and a half now and I don't regret buying them. I haven't found any flaws with them. As long as I take care of them, they don't get dull, and I can pretty much cut through anything I need too.

I'm looking at getting a good set of steak knives though. So if anyone has any good recommendations. Currently I use the boning knife. I would be happy with a set of those.

^ if you have henkels and are happy with them then i would just pick up a set of steak knives from them just to keep the same brand.

Finally my Shuns arrived. I love them. It was between these and Globals. I could have gone either way - my buddy has a Global set and they are great. It basically came down to design because function wise I think they are equal.

The shuns are great and you pay for them. I ended up putting wusthofs on my wedding registry.

Right now til the 11th of Nov their individual Wusthofs are 20% off.

I saw a Bob Kramer knife the other week and fucking loved it. I think that is my next purchase, although apparently I'll be waiting well over a year for him to make one...
