...Until I bought some Shuns. Holy crap, like night and day. I like to cook, worked in restaurants during school and loved our knives but I guess I didn't realize how crappy my Kitchen Aid block had become over the years. I read some old, old threads here and took the plunge for some Shun Classics and highly suggest you do too. I bought a 3.5" pairing, 3.5" utility, 8" chef, 9" bread, and 6" utility and will probably buy another one or two as needed. I hate the normal blocks so I grabbed a magnetic one from Crate and Barrel but the wife isn't liking it on the counter so we shall see.
Regardless, go hack some veggies up at William and Sonoma to see what you are missing.
I think the ones we have are the Wusthoff grand prix II. They're great knives and should last our entire lives. We have had them for several years and love em.
Thanks guys and yes, I heard nothing but good things about the Wusthoff knives which is why we have 8 of their steak knives in a nice box in the drawer. As for the handle, I believe they call it a "D shape" or something, which I really liked but it isn't for everyone.
Yes, damascus steel I believe. I really wanted the Premiere line but the classics were expensive enough.
Yes, make sure you have something to sharpen them with, as even the best knife will dull eventually.
My father in law brought me some ceramic bladed knives from Germany, last time he visited here. You don't actually ever have to sharpen them, which is kind of cool, however, you have to very careful with them which kind of sucks.
I too would like to get a set of Shuns or Wusthoffs in the near future. Money well spent, in my opinion.
Shun will sharpen your knives for free as long as you own them but obviously, I would have to ship them since I can't visit their location in Oregon. Still, not a bad deal and they suggest about once a year so I will probably do that. I love to research things so I will probably see how hard it is to do myself too.

FYI, Sur La Table offers sharpening for $5 per blade, and run specials for the first knife (free). I walked in and saw a woman sharpening with a wetstone and she was being VERY meticulous, not some generic grinding wheel/auto sharpener...
Shun knives are t1ts. We have a low end Wusthof set that's getting old now, next set I buy will be Shun knives. I love the look and feel of their premier knives, makes me feel like a ninja using them.

Money Saving Tip - Go to a Bed Bath and Beyond in a crappy area that won't carry these knives so they will have to order them. The 20% off coupons they offer do NOT apply to Shun but if they offer to order, since they aren't stocked, they will give you 20% off on everyone you order plus free shipping. Obviously, your results may vary but I saw they weren't in stock and said I would just order them online and he was quick to say he would order them for me and apply a 20% off that really should not work. Combined with free shipping, it was a deal.
I went to a different store to order a slide out, ridiculously overpriced Simple Human trash can and they offered to order with free shipping and the coupon as well. I don't know if Simple Human is excluded or not but I didn't need a coupon and it arrived in two days.

I think my next big kitchen purchase will be the Wusthof Classic Ikon 7 piece set. I've been using some ceramic knives for years and my sister let me use her Global G2 Chef's knife and it was so much easier to cut with it. The Classic Ikon seems to be one of the best and is easier to sharpen than Japanese steel. Plus you can get it in a cool creme color
