Honey-Jalapeno Chicken with Sesame Soba Noodles

I just want to share Robin Miller's recipe that I made for lunch (below is modified version). It's a keeper!
Honey-Jalapeno Chicken with Sesame Soba Noodles

14 ounces (or 4 bundles of 100g) soba noodles
3 chicken breasts (boiled then shredded) or 1 whole rotisserie chicken (shredded)
2 teaspoons olive oil

Honey Sauce:
1 jalapeno, seeds removed and chopped
1/3 cup honey
1/4 cup chopped fresh cilantro leaves
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 tablespoons water

Noodles Sauce:
3 tablespoons soy sauce
2 teaspoons sesame oil
1/4 cup chopped scallions, green part only
2 tablespoons pickled ginger, minced



Cook soba noodles: Once water is boiling, gently put the soba noodles. Lower the heat and stir noodles for 5 minutes. After draining the hot water, transfer noodles in a bowl and wash in cold water at least 3-5 times until water runs clear.

Cook chicken breasts: Put a dash of salt on chicken breasts and cook them in about 1 cup of boiling water for 3 minutes. Turn chicken and cook for another 3 minutes.

In a blender or small food processor, combine chopped jalapenos, honey, cilantro, and 1/2 teaspoon each salt and black pepper and puree until smooth. Add 3 tablespoons of water to the mixture until desired consistency is achieved.

Pour the 2 teaspoons of olive oil into a preheated skillet. At medium heat, stir-fry the shredded chicken for 3 minutes. Add honey sauce and cook until heated through.

In a medium bowl, combine soy sauce, sesame oil, scallions, and pickled ginger. Toss in cooked soba noodles (best to use your hands). Once noodles are all coated with the mixture, pour heated chicken and sauce.

Serves 4.

Mannnn ohhhh mannnn! This looks almost better than that chicken enchilada dish somebody posted up a couple months back. Hey Sasha you're right up the road, hook a brotha up with a plate! LOL!

That sounds great. I'd use the whole green onion but that is just personal preference
