Feta Cheese

Being an American/Greek feta is one thing that always stays in my fridge. Extra virgin olive (Greek) is the other.


Here is a few recipes from my kitchen.


Greek Salad
One Tomato
One Cucumber
Feta Cheese
Kalamata Olive
Pepperonchinis
Onions (optional)
Green Peppers
Dressing
Extra Virgin Olive Oil
Red Wine Vinegar
Greek Seasonings (oregano, fine sea salt and pepper)


For the salad cut the tomatoes in wedges and slice the cucumbers and then halve them. Also Julienne the green peppers. Crumble feta or cut in cubes. Add olives and Greek peppers. Add some banana peppers for some extra zip.


For the dressing: In a bowl add 1 cup of olive oil and 2 TBSP of vinegar with the seasonings and whisk briskly until well combined. Refrigerate or serve immediately it`s up to you.


Cranberry, Walnut, and Feta Salad


Dried Cranberries 1/4 cup
Walnuts Halved 1/4 cup
Feta Cheese (crumbled)1/4 cup
Mixed Greens salad mix


Mix all ingredients in a bowl served with your favorite Vinaigrette. Serving 2


I use a raspberry vinaigrette in my restaurant but you can also use a balsamic. I heard the champagne vinaigrette is also very good. Enjoy!

- sliced heirlooms
- sprinkle salt and pepper on
- crumble feta on
- lightly pour evoo on
- sprinkle fresh chopped basil on

We have this as a side in the summer 3 times out of 5!

My Greek Cheese Ball Recipe

Cheese Ball Ingredients:

2 (8 oz) packages cream cheese, softened
6 oz Athenos Tomato Basil feta cheese (package and a half)
2 tablespoons olive oil
2 cloves garlic, minced
2 1/2 teaspoons dried oregano
Cracked black pepper to taste

Topping Ingredients:
2 medium tomatoes, chopped
2 green onions, finely chopped (I've used diced red onions in a pinch)
1 small can sliced black olives
(Combine ingredients and chill separately)

Directions:

In a large bowl using an electric hand mixer, combine cream cheese, feta cheese, olive oil, garlic, oregano and pepper.

Cover and chill for at least 2 hours.

Remove mixture from refrigerator and form into 1 or 2 balls, I prefer 1 large cheese ball for presentation, and place on serving dish. Wrap in plastic wrap and refrigerate until ready to serve.

Poor topping over top before serving.

Serve with crackers, or pita chips

This is a huge hit, and has won me contests at work potlucks.

Spinach and Rice (Spanakorizo)


Great side dish or main meal very healthy and full of flavor.


1 bag of spinach Fresh or Frozen chopped
1/2 cup of crumbled Feta Cheese
1/4 cup of rice
1 tsp dill weed
1/4 cup chopped onion
1 tbsp. Olive oil (extra virgin)
Salt and Pepper to taste


On medium, heat the olive oil in a fry pan. when warm add onions and cook till soft and brown. Add your spinach and dill and cook until spinach is soft. When done add the feta and mix into the spinach. Next add the rice and a 1/2 cup of water to spinach and let cook until rice is done on simmer.

Being Greek, this post made me LOL. I wonder who's last name is longer? Mine is 11 letters! However, My entire name is 26 letters... Barely fits on a drivers license.

Mine is 24 letters using the full name.
