Chicken Cream Cheese Enchiladas *with pics*
The ingredients:
1 lb chicken breast
1 pkg cream cheese
2 cans green enchilada sauce
1 can green chiles
8-12 soft taco tortillas
1 tbsp montreal chicken spice
1 tbsp chili powder
1 pkg grated cheese
1 13X9X2 pan
For my recipe, I doubled the meat, cheese, and green chiles. Gotta spread the wealth
I decided to take pics after I started, so I don't have the beginning
chicken pics.
First cut the chicken into ~1" squares and put put in pan with the spices.
Spices are subjective. I added only these, because I was sure everybody
would like it.
Cook until the chicken is no longer pink (5-10 min)
While the chicken is cooking cut the cream cheese into little squares. This
makes it easier when you add it to the chicken.
When the chicken is complete, drain any juices and add the cream cheese..
and chilies..
Cook on medium heat until all the cheese is melted--looks pretty disgusting,
doesn't it? It isn't.
Now get your 13X9X2 pan and put a little enchilada sauce on the bottom.
Get the torillas...
and fill each one to your liking with the cream cheese and chicken mixture.
Don't put too much because you will run out before the pan is full.
Put the filled tortillas in the pan like so.
Continue until the pan is full.
I had to skimp on the last couple because I put too much in the first one.
Take the remaining cans of enchilada sauce and cover the tortillas.
Then cover that with 1/2 cup of cheese.
Cover with foil.
Bake at 350 for 30 minutes, then remove the foil and bake for another 10
min. Then enjoy.
These are especially good the next day.

I made this last night - so good!!
Definitely recommend using 2 lbs of chicken, and 2 cans of the green chiles. Used lowfat cream cheese, and you couldn't tell. Also used about a bag & a half of shredded cheese -mmm
I added some jalapenos to a few - kicked up the heat noticeably!
