Anyone got a good bruschetta recipe?

Okay I have two.
This one is a little more time intensive, but it has fresh ingredients so I think it's better:
12 roma (plum) tomatoes, chopped
1 tablespoon minced garlic
2 tablespoons minced shallots
1 cup chopped fresh basil leaves
1 teaspoon fresh lemon juice
salt to taste
black pepper to taste
1/3 cup extra virgin olive oil
3 cloves garlic, cut into slivers
1/4 cup extra virgin olive oil
1 (1 pound) loaf Italian bread, cut into 1/2 inch slices
DIRECTIONS:
1. In a large bowl, toss together the roma tomatoes, minced garlic, shallots, basil, lemon juice, salt, pepper and the 1/3 cup olive oil.
2. Place the slivered garlic and 1/4 cup olive oil in small saucepan over medium heat. Slowly cook and stir 2 to 3 minutes. Strain, and throw away the garlic.
3. Toast the bread, and brush with the olive oil+garlic mixture. Top slices with the roma tomato mixture.
I also like to sprinkle parmesan cheese over this and toast it for another minute or so, till the cheese melts.
Second recipe:
1 French baguette
1 tablespoon olive oil
2 roma (plum) tomatoes, thinly sliced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 teaspoon garlic powder
1 pinch ground white pepper
8 oz sliced mozzarella cheese
6 oz sliced provolone cheese
1. Preheat oven to 350 degrees.
2. Slice the baguette into thin (~1/2 inch) diagonal slices.
3. Arrange the slices in a single layer on a baking sheet.
4. Brush both sides of each slice with the olive oil.
5. Place tomato slices and a sprinkling of basil and oregano on the bread slices.
6. Sprinkle the tomatoes, basil and oregano with the garlic powder and white pepper.
7. Cover the tomato slices with slices of the mozzarella and provolone.
8. Sprinkle more basil, oregano and tomato slices on top of the cheese.
9. Bake 7 to 10 minutes, or till the cheese is bubbly.

You're welcome. FYI I got both recipes from www.allrecipes.com a long time ago, and they're both pretty good. That is a great website for all sorts of recipes, so keep it in mind in the future.

I keep it simple. Fresh tomato's, fresh basil, red onions, garlic. Mix it up, let it marinate in the fridge with some balsamic and olive oil for at least an hour, salt n pepper to taste, scoop it with some fresh bread...
