anyone experimented w/ any software to allow you to store DVD's on the PS3 itself?

Not personally, but one of the first things I'm going to do when I finally open my PS3 is replace the hard drive. 60GB is not enough to store HD movies on. Well, not many of them anyway.

^ From what I read you really don't have to 'open up' the PS3. It seems to have been designed for an easy swap that should not void warranty since the unit was never actually opened up.

Exactly. It's a plastic cover and a few screws. If it ever needs service, just put the 60 back in. Hehe.

Edit: Oh, now I see what you mean. When I said "open up", I meant take it out of the box. I've had it two months and haven't even cut the tape on the box. Waiting until we move into our new apartment on Sep 1.
