I was wondering if 235/45/17 will fit 17x9.5?

I know it'll be stretched, but will it fit?

Most manufacturer's recommend a 7.5"-9" wide wheel, but Sumitomo has a 7.5"-9.5" spec on their summer tire. Take a look at your tire manufacturer's recommendation.
So will it fit, yes, and if they aren't Sumitomo's or another brand that recommends a 9.5" width, you'll join the strecthed club.

Great, hopefully the shop won't have any problems mounting on the tires when I get the wheels...

You will be fine since it is only 17" and you have tall sidewall. They will stretch over 9.5 fine.
