Offset of 36, good or bad?
So I'm buying some new rims, but the only information available to me is that the Rims are 18x8.5 with an offset of "36"
My TL has the Aspec kit, which means my car is lowered.
I have a feeling there's more to rims than just size and offset, so is there anything else I should be worried about?

Depends on what your looking for. Do you want the rims flush with the fender or just rims that fit? If you want flush, you'll have to get a more aggressive offset, +30 or even less.

I used to have 18x8, +20(r), +25(f) using spacers with coilover drop as well
Had no problems ... given I rolled my rear fenders and modified my front a little as well
and now i'm getting 18x9.5, +37 with 225/40/18's all around
what tires will you be running? tire size will make a difference as well

Sorry while I'm familiar with most car terms, I have no idea what you mean by rolling my fenders. I'm sure a quick search in google would net me the answer, but would you be so kind as to post it here?
Right now the full specs of the tire would be
18x8.5 36 Offset
235/40/18 Tires

Your rear fender has a tab of metal that pushes horziontally towards the inside of the car. If you lower your car far enough, your tire will rub against that tab, causing either damage to your car or your tires. A fender roller looks like this:
Using a heat gun to "soften" the metal, the roller pushes up the metal flush against the inner wall of the fender so it won't make contact with the tire.
As for a bolt pattern, make sure it's 114.3 x 5
