It should rub...if you fit a proper tire. But with a 215 you are right on the line. My best guess is that it won't rub at all, and if it does it'll take very little work (camber only) to get it to fit perfect.

Here's a youtube video for reference. Dude is running exact same wheel dimensions and tire size you are wanting. 18x9.75+20 offset 215 35 18 tire.
If you look closely in the video you can see the lip of the wheel sticking out exposed without any sidewall protection. If you want to do it right, (I'm assuming your looking at XXR530's) get the 18x8.75 +20 offset and wrap it in a 225/40/18 tire. Still a slight strecth but much more functional than the setup you were orignally wanting.

imo that dont even look good at all
with the xxr being on the very cheap side in terms of wheels i think id want to give the wheel more protection. man you hit a pebble on that set up and it could be game over lol

What would be a better choice when it come to wheels. i mean i was also looking at some vsf1's but the smallest they come in is 19 and i feel like that is way to big. what im trying to go for. Is for the wheel to sit flush with the side of the car because right now i have the stock rims and they kind of sit sunk in and im not really feeling it.

For only a 1 inch drop, ideally you'd want something less aggressive so it doesn't poke out. However, if you have coilovers than obviously you can adjust the height to make the wheels fit better. You can still do the 18x9.75 +20 if that's your preference, but you'd be better off going with a 225/40/18 tire. It'll still have stretch, but not as exaggerated as it is above with the 215.
The majority of the XXR guys (myself included) went with the 18x8.75 +20 with 225/40/18 all around. It's pretty damn flush.
