Looking at these, would these suffice for good motor mount replacements? (Also some kits have 6 mounts/parts and some have 4?) The local shop is trying to charge me $500 for labor and $1000 in parts.

There are 3 motor mounts. Front side and rear. Have you tried searching rock auto? Don't buy the parts from the local shop.

 

They're trying to steal you blind! Go find another shop. And look for an ebaY seller that gives a 5 or 6 year warranty. They're on there!
The fact that these guys are only providing a 1 year warranty says "stay away" to me. That applies to this shop too!
