Good question. I think the reason it lets you start in second is for those times you want to limit the torque to the wheels. Starting in second was a trick we used when driving in slippery conditions. Of course, modern cars have traction control, so that's not needed anymore.

I think you can control the shift from 1 to 2 by putting the selector in L instead of SS, but it's really not practical.
