Can u shut off the automatic rain sensor system? and just operate it normal intermittent? As this 1 feature that was driving my wife crazy.....windshield wipers seemed to change speeds, during the rain today on our test drive.

No. You have 4 choices - Off, Variable (rain sense) Intermittent, Slow, Fast. It's actually one of my favorite features - among many.

In the slow intermittent setting can you twist the stalk to speed it up and slow it down? And in rain sense mode, you can't increase and decrease sensitivity?

If you have the rain sense feature the adjustment knob on the stalk adjusts the sensitivity versus the wipe interval as on the non-rain sense system. Other than that the functionality is the same on both systems. Hope that answers you question.
