Not sure if that's been done before. You would have to hack into the new head unit and route the steering wheel controls wires to the appropriate wires in the HU.
Your best bet is to go to a local audio shop. Sorry I couldn't be of more help, but good luck. And welcome to the forum.

Some Headunits have the steering wheel control addons. I got a headunit that uses a wireless remote via infrared which allows me to use this PAC SWI-X Steering Wheel Interface. basically you can program all 3 buttons to the wireless remote and even make your own buttons I believe. So pushing the buttons on the steering wheel control will be like as if you were using the wireless infrared remote. there are a few models of headunits of infrared it doesnt work for but it does work for majority.

I got mine for just about $40 from some website besides crutchfield.

lovin it
did you DIY or what -- what do i need to connect my JL500/1 to the stock bose?hu
does the bose have the audio outputs --what am i missing? I'm (trying) to build the amp rack myself also input needed on that plz thx again for continued suggestions and support.
you need a line converter to convert the speaker wires into RCA's (no the BLOZ hu doesnt have any way to conect otherwise), you need to run a power wire from battery to the trunk, and you need a good ground and remote turn on
