All are within 3 mm of the stock 677 mm size if you want to adhere to the true "plus" principle sizing. However, others, notably Touge, have tried a different size, 255/35-19 which are -16 mm shorter, with no apparent issues.

I am no expert, but the theoretical height is 9mm more, or 1.3% difference, so the answer is not much difference. Your speedo will be reading slightly low, so travelling an indicated 60, you will be actually going 61.
Theoretically, you want to keep to no more than 2.0% to 2.5% difference.

Of course, 16 mm less height overall translates to 8 mm less (8mm on the bottom and 8 mm on the top). 8 mm is about a third of an inch less "protection" than the 245.

I know that I may have gotten mixed up between whether you were asking about 255/35-19 and 255/35-20 tire sizes in all of this posting. Here are the differences I get from the web tire calculator:
http://www.tyresave.co.uk/tyresize.html
The sizes in bold are not direct "plus" sizing replacements, but *should* work...remember your mileage may vary.
RL Overall Tire Diameter
245/50-17 = 26.65 in or 677 mm Stock tire size
245/45-18 = 26.68 in or 678 mm or + 1 mm difference from stock
245/40-19 = 26.72 in or 679 mm or + 2 mm difference from stock
255/35-19 = 26.03 in or 661 mm or -16 mm difference from stock (what Touge used) At indicated 60 mph you will be actually traveling at 58.6 mph
245/35-20 = 26.75 in or 679 mm or + 2 mm difference from stock
255/35-20 = 27.03 in or 686 mm or + 9 mm difference from stock At indicated 60 mph you will be actually traveling at 60.9 mph

No clue. The fact that they are larger in diameter than stock by +9 and +25mm (that is 1 full inch) than the 255/35-19 that Touge used, certainly increases the chances. I have not looked at sizes in 20, but why not go with a size close to stock, like 245/35-20. The physical volume of the space taken up by the wheel/tire should not change. The difference of course, will be in offset and how far out or in the tire falls with respect to the stock position.
