Who says the recommended size is 255/35R20? A 245/35 is actually closer to the overall stock diameter.
245/50R17=26.65" Diameter
245/45R18=26.68" Diameter
245/35R20=26.75" Diameter
255/35R20=27.03" Diameter
Personally, I went with the 255's for two main reasons. First, I wanted a little bit wider tire than the stock 245's. Second, most 20" wheels are at least 8.5" wide, (1/2" wider than stock), so wrapping them with a little bit wider tire makes sense.
