Do you replace valve cover gaskets when adjusting valve clearance?

Do you replace valve cover gaskets when adjusting valve clearance?

My car is 10 years old, I am going to pull the valve covers to adjust the valve lash. If I use the same original gaskets would it leak or is it fine in your experience?

At ten years old, the gaskets should be replaced along side the timing belt/tensioner/ etc

Ditto. Gaskets should always be replaced, no matter how old if they're being taken apart.
