How to read a dyno?

What kind of info does a dyno chart really give? Obviously, you can see peak HP/torque.

But let's say we have two cars with CAIs installed:
- RSX-S
- CL-S

Pretend that we scale the two dynos such that the RSX-S has a peak HP of 212HP just like the CL-S. Both cars have rather dissimilar curves.

For the RSX, there's a nice steady increase in HP until 115hp@5000rpm. Thereafter, it flatlines till 5500rpm and then there's a surge and the RSX hits 145hp@6000rpm. After this surge, there's a steady increase until 180hp@7750rpm. Thereafter, it drops off slightly to maybe 175hp@8000rpm.

Comparatively, on the CL, there's a very steady increase all the way from 2250rpm till 212hp@6500. Thereafter, it drops off to about 205hp@7000rpm.

What can one infer given from those two dynos?

As an aside, the VTEC supposedly kicks in at 4000+ rpm, so why don't I see any visible increase in the rate of hp increase?

Thanks!
