Putting my personal oppinions away for the moment, you can make anything from a 25 to a 40 series tire work, it depends on your width. You can also make a 7.5 or an 8.5 inch wheel work just fine too.

You could go with a 205/35/20 if you want a 35 series tire, or with a 225/30/20 if you want a 30 series tire. Either way you're going to have the same sidewall size so it doesn't matter which you pick, it'll look the same. If you want, go with a 175/40/20 or a 275/25/20 and you'll still have the same size sidewall despite the different aspect ratios. Though they'll all work (if you can find a tire in that size) I'd suggest the 225/30/20. It'll be ugly, but you'll have just about the same outside dimensions as a stock tire, but the 20 inch wheels you want. With a 225 tire, I think 8.5 is a your only option as 7.5 is too small right?

7.5s will probably be lighter so you'll have that benefit. The tires will look more "stretched" out on an 8.5 than a 7.5. Other than that, nope, there's no other pros or cons.
