I once used my license plate and added numbers to it to see around where i'd find nearby license plate numbers. For example with a license plate 1ABC532...I'll look up 1ABC533, 1ABC534, etc.. Look up your parent's plates...friends...etc. Or if you see modified cars, jot down their plates and see where they have their smog checks done. Maybe they're lenient on modded cars...
3. Someone might pay to have a vanity plate created with your same license plate number. Then they can go around and get you in trouble for speeding or whatever.
These are some ideas I can come up with. Basically it's an identifying number, which can be useful in trying to track down your vehicle and steal it. You wouldn't broadcast your address or phone number...why broadcast your license plate so that people have more information on how to track down your car?
Although I've seen a trend of people not bothering to remove their license plate with photoshop. People either don't care, or they've become lax in security.
Why did you let your gf take pictures? Have her sit in her car and you go take pictures ;-) jk

Showing up at a car meet is a different story. You automatically give approval for your pictures to be posted. It's basically like you going out in public, and some random guy on the freeway takes your picture. So unless the photographer is nice and is willing to remove your pictures or edit your photos, you've already implied permission.
But be nice...at least just photoshop at least he plates out
