If you turn off the VSA and kill the engine, would it be automatically enabled when you restart the engine?
I recall the owner's manual stating it should but mine did not.
Could someone please verify. Thanks.

If it is enabled the light is off. So are you saying that the light comes on and stays on if you restart the car? If so, see your dealer. If the light is off, then the VSA is switched ON and all is normal.

I can confirm that the VSA will turn on again after the engine died. I killed my engine on one of the runs today, spun and killed the engine in the process. After restarting the engine, VSA turned back on (indicator off).

It's just like overdrive on some cars. Over drive is automatically engaged whenver you start up the car, then you have to turn if off if you don't want to drive with overdrive on.
The VSA should turn back on everytime you restart the car.
