Sun is up. Again. But, I checked my farmers almanac and found out that today is known as "Tuesday" in the vernacular from when time was tracked.
So, as such, tonight's dinner is tacos. Green chile chicken.

That sounds good. I've never tried my hand at making risotto. It's pretty labor intensive, isn't it?
I did stuffed bell peppers yesterday. Found a recipe that was supposed to be 1:35 all in including 45 minutes of cook time but 2 hours into prepping and I almost chucked it all and made mac n cheese.
Stuck it out though and it turned out pretty good. Need to be smarter about prepping next time though.

Yeah, it's a lot of stirring in but overall doesn't take too long.
And the kids all love it, which is huge. Usually it's like a fucking
restaurant at our house when we have all of them with everyone
being a g'dang critic on what could be better and what they don't like.
Shit...my mom used to say you eat that shit or you go to bed hungry.
We actually bought a instant pot and returned it. It was cool for some
gourmet mac and cheese but after some overly soggy wings and a
handful of other meals we kinda decided we could just use the slow cooker
and not store some other flavor of the month appliance.
And the kids all love it, which is huge. Usually it's like a fucking

Yeah, I haven't gotten on the instapot bandwagon. I have (had) a crotch pot that I used for slow cooking. But a couple months ago, I forget what I was doing, but took the crock out of the heater pot and stuck it in the oven. When I took it out and pulled the meat out ( ), I guess the rapid loss of thermal mass of the hot meat ( ) resulted in a nasty ping sound. Which ended up being the sound of the crock breaking.
So I'm without right now. Need to go to Le Target and drop another $25.

I think the Instant pot has a time and place, but is overall stupidly overpriced... pressure cookers make quick work of things like oxtail soup/stew... i was able to make some oxtail stew a few months back in 1.5-2hours instead of 6-8 so that was kind of neat

Yeah, that was a big factor... I've got a crock pot, I've got a pressure cooker, I've got a rice cooker... So I'm not really sure what the instant pot brings to the table. Maybe if I was just starting, getting one thing instead of all three might make sense. But then, I kind of see it like those 7-in-1 stereos from the '80s... Does everything, but nothing particularly well.
Then again, maybe it really is better than that. But I'm already invested in what I've got. Actually, planning to take it another step towards luddite and want to pick up a nice 5-qt cast iron dutch oven. Dig a pit in the back yard and get some coals going.
