Scuff in headrest...

Accidently put a small scuff/tear in the back of the passenger headrest from the end of ladder rubbing against it.

Its not actually cut, just a 2 inch thin line of surface leather has been rubbed off. Unfortunately, it sticks out like a sore thumb.

Is there any sort of DIY product or technique to hiding/repairing it? Shoe polish? Some sort of coloured adhesive?

I remember seeing some leather dye type stuff on ebay that was supposed to be used for old/cracked leather. I can't find a link, but it would probably work in your situation.

Maybe go to a shoe repair shop or Wilson's leather in the mall and ask them.
