Dash gauge lighting

Morning all,

Is there a way to change the colour of the dash/gauge lightning from red, to say, blue?

You mean, is there a function in the car that does this? No. You can take apart the dash and replace all the bulbs. Pretty major job with risk of breaking things if you don't know what you're doing.
