After dating for a year, I'm wondering if she got back together with her ex-fiance because you don't appear to take your relationship seriously (based on your statement that she wants to put her life in order which I'm interpreting as "I want to get married and have kids soon"). I'm not saying what she did is right, however, you guys were not exclusive and you rarely saw each other. She probably felt that she technically has the right to see whoever she wants including her ex (remember, Ross slept with someone while he was on a break with Rachel in Friends?).

From the info you've provided, she's demonstrated a 15 year long pattern of bad decision making. First she invents a story about you cheating on her, disappears for 10+ years, initiates reconnecting with you, dumps a fiance only to just be sporadically involved with you, is 28 and still lives with mom, gets kicked out by mom, dumps you and runs back to fiance as a safety blanket, and now regrets it.
So the biggest thing you need to watch out for is that she is playing the role of a damsel in distress. This is why men chase crazy women. They appear broken, and we want to fix them. They appear in need of rescue, and we feel needed and appreciated by doing the rescuing. "If she were only with me, I'd give her what she needs to be stable and happy". It's a lie, an illusion, and a trap.
You would be safer dating a jar of festering Ebola. Seriously.
